Cook with me Saturday: Jamaican Bully Beef and Rice

Canned corned beef, or “bully beef” as it is known in Jamaica, has been transformed by island cooks into a spicy, satisfying dinner dish sure to become a favorite quick and easy meal. During hurricanes it is the meal of choice. Try our simple Bully Beef recipe.

  • 1 can corned beef
  • 1 medium onion (sliced)
  • 2 sprigs fresh thyme
  • 2 stalks scallion (chopped)
  • 1 scotch bonnet pepper (de-seed and chopped)
  • I don't use OIL-Corned Beef already have its own
  1. Add onions, garlic (optional), scallion and scotch bonnet to frying pan with corned beef. Turn down heat to medium- low and stir until cooked.
  2. Add thyme.
  3. Bully Beef is usually served for breakfast with Johnny Cakes, boiled green bananas or toast. It can also be served with white rice.(Serves 4)

Cook with me Saturday: Bake Catfish with Panko

Get the delicious flavor of fried fish without all the unhealthy fat.

Here is my simple recipe:

Season catfish to your desire, salt (I didn't use any salt I use Louisiana hot sauce after baking), garlic, pepper. 
Dip in a beaten egg, then dredge in panko crumbs. 
Place on Olive Oil (your choice of oil) sprayed cookie sheet with foil and bake at 375 till done.

Serve with salad or your choice of side (s).

DIY Spring Wreath!

ok, I've tried making a wreath before and I did not get far! So, I decide to try again.

Bring bright colors of spring into your home with this colorful wreath. I use vibrant flowers to decorate with.

I bought the flowers from the Dollar store $5, wreath form from Hobby Lobby (forgot the price).

I don't have instructions, I just wrap ribbons around and use my glue gun and glue all the flowers on the wreath. That's it!!!

Turkey Lasagna using #Ragu4You

I recently got a #ComfortVox box in the mail from It was full of awesome free samples and coupons. One of those coupons was fro a free jar of Ragu. Today I am going to share my recipe for lasagna that I made with Ragu. I made one big pan full of Turkey Lasagna.


  • 1 medium onion
  • 1 red bell pepper
  • 3 garlic cloves
  • 1 pound lean ground turkey
  • 1 teaspoon dried rosemary, crumbled
  • 1/4 teaspoon dried oregano, crumbled
  • 1 tablespoon tomato paste
  • 2 1/2 box of Lasagna noodles (oven ready)
  • 1 jar of your favorite flavor Ragu


    1. Finely chop onion, carrots, celery, and bell pepper. Mince garlic.
    2. In a large heavy non-stick skillet brown turkey meat stirring and breaking up lumps, until just cooked through. Add to skillet chopped vegetables, garlic, rosemary, oregano, and salt and pepper to taste over moderate heat, stirring occasionally, until vegetables are just softened.  Stir in the jar  of Ragu sauce and keep warm, covered. 
    3. I get the water boiling, dip the noodles for about a minute or so then put in the pan. I put a layer of sauce in the bottom of a 9x13 baking pan. I never measure but its probably about a cup of sauce then I add 3 noodles side by side, Layer 1/2 the cheese mix on top of the noodles,  Put a layer of sauce, Top that with 3 more noodles, then put the rest of the cheese for another layer of cheese and then 3 more noodles. Then I put another cup or some of sauce on the top. Bake for 45 minutes at 350 degrees. About 10 minutes before its done I like to sprinkle a handful of mozzarella cheese over top the sauce to brown.  When you first take it out of the oven it will be very runny because of the melted cheese. We let it sit about 20 minutes before cutting to keep it from being so runny. This was so good, that we almost licked the pan. Apparently it has been too long since I made lasagna because usually we have leftovers to eat the next day but we ate the whole pan in one evening.  I also make stuffed shells just the same way only instead of layering the noodles, I stuff the shells with the cheese mix and put sauce of them. My daughter thinks it taste better as stuffed shells. I tell her its exactly the same but she still swears by stuffed noodles. So.... What's been up?

I know......some of you guys are probably like "where have you been?" It's been like forever since I last posted! No other excuse I can give but.... LIFE.

We bought a house (home), busy, busy, busy, our children is a new school, I work a lot, just life! 

God has definitely blessed us last year and we are preparing for everything that He has in store for us in 2016! I'm super excited!!!

So you could say I sort of took a hiatus for a minute...... but I plan to be full force this year, my life is evolving and I want you guys to be a part of it!
